Things on Toast: Avocado, blue cheese and bacon

The Things on Toast series is all about, surprisingly, things on toast. Taking our favourite toast beyond jam, marmite or beans and looking at ways to perk up our bread for meals or snacks. This time we’re devouring avocado, blue cheese and bacon on toast.

I can’t really call this a recipe. It’s things on toast so it shouldn’t be hard, it’s just about topping bread with food you like. Here thick slices of toast are topped with creamy mashed avocado, salty blue cheese and crispy bacon.

Rich has just discovered a love for avocado. Which is good. Apart from I now have to share. Up to now they have always been my ‘thing’ in the fridge, safe to leave with no worries that I will return later to find it gone. That doesn’t happen now.

And I’m not complaining, I’m really not*. It’s just I’m not that good at sharing.

Avocado on toast is one of my favourite light meals or more substantial snacks. It’s perfect for those ‘I need to eat but I can’t be bothered or I’ll be eating later anyway’ moments. I usually opt for keeping things simple with a little lime or lemon juice and a hefty dose of chilli but the creaminess is a perfect partner for blue cheese and bacon.

I like to use a substantial bread for this, multigrain is fantastic, and whatever blue cheese I have lurking in the fridge, it’s really not a fussy dish. I haven’t specified amounts for the cheese because it really is down to personal preference, the more the better in my book.

Cut your bread on the thick side, it needs to be able to support a generous amount of topping. Plus biting through the crunchy toast into the soft avocado is lovely. The blue cheese delivers a salty tang and there’s a delicious savoury hit from the bacon.

It’s quick (10 minutes tops), simple and tasty, everything things on toast should be.

*This might be a lie.

Avocado, blue cheese and bacon on toast

Yield: 2 slices, serves 1 more than generously or 2 sensibly

Thick slices of toast are topped with creamy mashed avocado, salty blue cheese and crispy bacon. Whether you call it a snack or a light meal it’s good. I like to use a substantial bread for this, multigrain is fantastic and whatever blue cheese I have lurking in the fridge. Ingredients

  • 4 rashers bacon, I like smoked back
  • 2 thick slices bread, I like multigrain
  • 2 ripe avocados
  • Freshly ground black pepper
  • Blue cheese, I find it hard to specify an amount as it really depends on how much you like blue cheese!

Instructions

  1. Grill or dry fry your bacon until it becomes crispy.
  2. Pop the bread in the toaster. While you are waiting, scoop the avocado flesh into a bowl and mash with freshly ground pepper. Spread across the toasted bread, crumble over the blue cheese and top with the bacon.
  3. Eat!
  4. This doesn’t keep well. Without the addition of lime or lemon juice, the avocado will lose its colour and not look particularly pleasant, this is one to make and eat as soon as possible!
